Ube Waffle

Serves 1
INGREDIENTS
Waffle Batter:
3/4 cups milk
1 egg
1/2 tsp. ube extract
1/4 tsp. vanilla extract
1 1/4 cup mochiko flour
1/4 cup sugar
1 1/2 tsp. baking powder
1/4 tsp. salt
Coconut Cream Cheese Frosting:
8 oz. cream cheese
1/2 cup coconut cream
1/4 cup condensed milk
Garnish:
Fresh strawberries
Toasted coconut flakes
DIRECTIONS
For the Batter:
- In a medium mixing bowl add milk, egg, ube extract and vanilla extract. Whisk until well combined.
- In a separate bowl, add your dry ingredients: flour, sugar, baking powder and salt. Whisk until well combined.
- Add your dry ingredients to your wet ingredients little by little, while mixing to ensure ingredients are well combined. Small lumps in the batter are okay.
- Spray nonstick cooking spray on the waffle iron. Add 4 oz. of the batter to the waffle iron. Cook for 3-5 minutes or until golden brown.
For the Frosting:
- Allow the cream cheese to soften at room temperature.
- Once your cream cheese is soft, add to a medium mixing bowl with your coconut cream and condensed milk. Whisk until well combined.
- Top your waffle with 2 oz. of frosting, and garnish with fresh strawberries and about a tbsp. of toasted coconut.
