The Grand Restaurant Group, one of San Diego’s most distinctive dining groups, today announced Ponsaty’s, its latest restaurant venture, is set to open on July 28. Located in Rancho Santa Fe, Calif., Ponsaty’s will occupy the former Delicias Restaurant space and will combine elements of classical French and Spanish cuisine with an upscale, yet comfortable dining experience in the heart of Rancho Santa Fe.  “Ponsaty’s will offer a dining experience for everyone—from a beautifully designed indoor dining room, to casual and comfortable outdoor dining areas perfect for families,” said Sandy DiCicco, Chief Executive Officer and Operating Partner, The Grand Restaurant Group. “We could not be more excited to open our doors this summer and bring Chef Patrick Ponsaty’s unforgettable cuisine to the Rancho Santa Fe community.” Ponsaty’s will welcome couples and families alike to dine in its elegant main dining room; or in the comfort of the casual front and back patios. Master French Chef and The Grand Restaurant Group Corporate Chef Patrick Ponsaty will helm the kitchen at his namesake, Ponsaty’s, and has created a menu of locally sourced meats and produce from purveyors including the Group’s sister property The Ranch at Bandy Canyon. His elevated, responsibly sourced cuisine will showcase classical French and Spanish flavors focused on the Basque region of France and Spain. Signature dish selections will include ‘Californian Burrata and Serrano Ham’ with shaved local vegetables; ‘Baja Scallops with Bandy Canyon Ranch Carrots’ featuring tri-color baby carrots, orange blossom and garbanzo-orange sauce and ‘Veal Cheeks’ with orange, roasted shallot, candied carrot puree and Madeira wine sauce. Ponsaty will be joined in the kitchen by an esteemed team of French chefs including Executive Chef of Ponsaty’s, Alain Delahaye, and internationally recognized Corporate Pastry Chef Bruno Albouze of YouTube’s “The Real Deal Cooking Channel.” Ponsaty’s will also offer an impressive selection of signature cocktails including ‘Sandy’s Strawberry Basil Martini,’ a refreshing cocktail made with vodka, St. Germaine, fresh strawberries, basil and a sugar rim; and ‘Patrick’s White Sangria,’ made with wine-brandy, local stone fruit and fresh mint; one of San Diego’s most dynamic scotch lists featuring nearly 50 different scotches from around the world and the option to create a custom scotch flight; and a well-curated list of more than 300 wines, with standout selections including a 2000 Chateau Rauzan-Segla, 2nd Growth from Margaux, France; a 2007 Saxon-Brown Cabernet Sauvignon from Napa Valley and a Paul Hobbs Beckstoffer To Kalon Vineyard Cabernet Sauvignon from Napa Valley.  The new restaurant will boast an elegant indoor dining room adorned with chandeliers by Jonathan Adler and Schonbeck; booths upholstered with custom French tufted leather and a private, intimate seating area that can accommodate up to six guests. The main dining room also features seating options ranging from romantic tables for two, to custom burl wood tables complemented by custom faux-alligator chairs by designer Laurence Solc. Front and back patios provide a more casual dining experience perfect for families, where guests can order a selection of signature flatbreads and other small tapas-style plates. The front patio also features an herb garden, where Ponsaty will grow herbs for use in his signature dishes.  The main bar area, built for socializing and enjoying the restaurant’s vast selection of cocktails, wines and fine scotches, is dotted with custom bar stools and intimate pub-style booths complemented by French tufting and brass buttons. The bar is wrapped with a Scottish-inspired fabric and black leather bar wrap and the stone bar top backlit to create a sexy, yet sophisticated bar / lounge experience. Guests can also catch all major sporting events on the bar area’s high-definition televisions.  “We wanted to take a risk with the design of Ponsaty’s,” said Derry van Nortwick, Vice President of Operations, The Grand Restaurant Group. “Through our use of custom-made art pieces, different textures and colors, we were able to incorporate different visions for the restaurant into its design, which makes the space truly unique and special.”  Ponsaty’s will be open for lunch and dinner Tuesday through Sunday.
